This time of year, courgettes are in constant supply, making them a great addition to most any meal due to the high amount of vitamin C and B6 they contain. So, if you’ve got one or two (or ten) lying around just waiting to be used, here are the three amazingly delicious recipes you’re going to want to try:

Courgetti Bolognese

Swap out your pasta for courgette (also referred to as “courgetti” when it is replacing this starchy food) and you’ll get the pasta-eating experience without all of the carbs and fatigue that often come with this type of heavy meal. Earning 5 stars on BBC’s Good Food website, one particular courgetti Bolognese recipe involves cooking up onion, garlic, carrots, and mushrooms and adding it to turkey mince, tomato puree, chopped tomatoes, water, and chicken stock before simmering for an hour and then adding soy sauce and spiral courgettes to the pot to finish the dish. Yum!

Courgette Fritters

If you already have a main dish and are simply looking for a healthy side, courgette fritters are the way to go. They’re easy to make too. Just cut them into sticks, dip them in milk, and cover them in flour before frying them in olive oil for a couple of minutes. They’re better for you than fries and they taste great too!

Courgette & Orange Cake with Cream Cheese Frosting

Just because courgettes are vegetables doesn’t mean that you can’t make them into something sweet. This particular cake recipe involves grating the courgettes and removing any excess water by squeezing them with your hands. From there, you mix them with a variety of cake-based ingredients like sugar, eggs, orange zest, and vanilla, baking the cake for 50 minutes and letting it cool before topping it with a cream cheese topping that will melt in your mouth.
