Spinach Vegetable Penne Pasta



  • 1/2 packet pasta
  • 1 chopped tomatoes 
  • 1 tsp lemon juice
  • 1/2 chili flakes 
  • 1 tsp oregano 
  • 2 cloves garlic finely diced 
  • 2 tbsp olive oil  
  • 1 diced onion
  • 1 diced pepper
  • 1 handful olives 
  • 1 tsp sugar 
  • 1 handful chopped spinach leaf's 

Salt and pepper a must for every dish. Season with caution. 



Cook pasta in boiling salted water - follow directions on packet 

Then using a frying pan place on medium heat, add garlic, peppers and onion cook until brown, add olives, chilli flakes and oregano with lemon juice at the end. Cook for 3 minutes then add chopped tomatoes and sugar, cooking for a further 10 minutes on low heat. Once the sauce and pasta are ready add the sauce to the pasta with olive oil. Finish with fresh chopped spinach and cottage cheese (optional).
