Winter Cooking – Thai Beef and Mixed Pepper Stir-Fry, and Fruit Fritters with Ice Cream

This great combination is an ideal way to get the essential nutrients following a great workout on a cold, winter’s day (along with something sweet for after).

Thai Beef and Mixed Pepper Stir-Fry

The appetizingly fresh flavours of lemon grass and ginger make this an outstanding meal. Fresh, stress-free, and extraordinarily flavoursome, this is one to make over and over.

Preparation Duration: 15 minutes

Cooking Duration: 10 minutes

Serves: 4

Ingredients

  1. 1 lightly chopped garlic clove
  2. 1 tablespoon of vegetable oil
  3. 1 finely chopped lemon grass stalk
  4. 1 red pepper, deseeded, cored, and thickly sliced
  5. 2.5-centimetre part of fresh root ginger, finely chopped and peeled
  6. 1 onion, heavily sliced
  7. 2 tablespoons of lime juice
  8. Powdered pepper
  9. 1 green pepper, deseeded, cored, and heavily sliced
  10. 500 grams of fillet of rump steak, cut into long, thin slivers

Preparation

  1. Warm up the vegetable oil in a wok or large frying pan over an intense heat. Integrate the stir-fry and garlic for one minute.
  2. Incorporate the stir-fry and the beef for two to three minutes up until a tad coloured. Mix in the ginger and lemon grass and then place the beef into a bowl or similar container.
  3. Reheat the frying pan or wok and stir-fry the onion and peppers for two to three minutes up till the onions are just startingto soften and turn brown.
  4. Integrate the beef back into the pan, and then stir in the lime juice and sprinkle with powdered pepper. Dish up on a dune of noodles or rice.

 

 

Fruit Fritters with Ice Cream

Choose appropriate but firm fruits for this dessert, such as apricots and peaches, or maybe even bananas or apples.

Preparation Duration: 15 minutes

Cooking Duration: 10 minutes

Serves: 2

Ingredients

  1. Dash of ground mixed spice
  2. Salt
  3. 40 grams of flour
  4. 15 grams of liquefied butter
  5. 1 egg, divided
  6. 125 grams of fruit
  7. 75 millilitres of sparkling water
  8. Ice cream
  9. Sugar, to scatter
  10. Vegetable oil, for deep-frying

Preparation

  1. Mix the flour with a splash of mixed spice and salt in a bowl or similar container. Whisk in the egg yolk, sparkling water, and melted butter to make a smooth batter.
  2. Beat the egg while in an additional bowl or similar container, and then progressively mix into the batter.
  3. Warm up 2.5-centimetre of oil in a deep saucepan.
  4. In the interim, pit, peel, slice, or quarter the fruit.
  5. Dip the fruit into the batter and deep-fry for one to two minutes, up till golden and crisp. Drain on kitchen paper.
  6. Shower the fritters with a touch of sugar and eat with ice cream as you wish!
