This is a truly delicious scone recipe with no fancy extra costs. I use this recipe at home it’s so simple. You can make a large 8 small or 6 large scones by following this recipe.

Make this recipe healthier we used a low fat cheese and cottage cheese. You can add more ingredients to this recipe to make sundried tomato , pesto or basil and pine nut scones (my favourite).

Ingredients
  • 2 cups of plain flour
  • 1 cup cheese grated
  • pinch of smoked paprika
  • 1 tsp dried mixed herbs
  • 1 cup of whole milk
  • 15g baking powder
  • 1 pinch of salt
  • 1 tbsp cottage cheese / soft cheese.
Method

Place all dry ingredients together in a big mixing bowl, mix together for one minute. Turn oven on 180c -190c.

Add cottage cheese and milk, using a big wooden spoon or stirrer to mix the milk and cheese into the dry ingredients. Hands or mixing machine can be used for this method.

Make sure you don’t over mix the dough, you only want to make sure you bring the mix to the binding stage  and no further. As soon as the mix is bound together. Once this level is reached place to the side.

Using grease proof paper or flour make sure the surface of the tray is well covered before placing mix on top. Then using two table spoons ,one to get a good scoop of the mix and the other to scrap off the spoon onto the tray. Try and place the scone mix on baking tray with a nice big space around.

The place in oven and cook for 12 -13 minutes depending on size. If small leave 10 minutes then check.
