Roasting vegetables

Eating all important vegetables is essential. I love roasting vegetables it has to be the best way to get the maximum taste. The best way to roast vegetables is to cover with olive oil and season well.

You can use any vegetables, all you need to do is chop them into 2 cm squares. Then cover with oil , salt ,pepper and oregano(or any dry herb).Place them on a tray cook for 10-15 minutes at 200 c, be careful not to overcook them.

In this recipe I have roasted the vegetables and puff pasty. I have cooked the puff pastry  and filled with pesto hummus .

 

 

 

 

 

 

I normally buy a big load and cook them all at the same time, as this help by saving me time and money !

I used carrots, onions, courgettes and celery in the picture above. Once you’ve roasted a load you can use them up through the week in they go with nearly every dish salads, pasta, rice or sandwiches.
