Tomato soup recipe
Ingredients
- 1 tin chopped tomatoes 500g
- 1 cucumber diced and peeled
- 1 bay leaf
- 100ml veg stock
- 1 carrot peeled and grated
- 1 roasted pepper peeled
- 1 roasted garlic clove peeled
- 2 tsp olive oil
- salt & pepper
- 1 pinch sugar
- 1 tbsp vinegar white wine
Method
- Place tomatoes in the pan and add veg stock, garlic and bayl leaf cook for 5-10 minutes
- Add salt & pepper, garlic, pepper, vinegar and sugar cook for a further 2 minutes and keep stirring
- Finally add cucumber, carrot and olive oil then blend together and serve. Remember to remove the bay leaf before blending.
