 Tomato soup recipe

Ingredients

  • 1 tin chopped tomatoes 500g
  • 1 cucumber diced and peeled
  • 1 bay leaf
  • 100ml veg stock
  • 1 carrot peeled and grated
  • 1 roasted pepper peeled
  • 1 roasted garlic clove peeled
  • 2 tsp olive oil
  • salt & pepper
  • 1 pinch sugar
  • 1 tbsp vinegar white wine

Method 

  1. Place tomatoes in the pan and add veg stock, garlic and bayl leaf cook for 5-10 minutes
  2. Add salt & pepper, garlic, pepper, vinegar and sugar cook for a further 2 minutes and keep stirring
  3. Finally add cucumber, carrot and olive oil then blend together and serve. Remember to remove the bay leaf before blending.
