5 minute Gazpacho soup

  • 1 tin chopped tomatoes 500g
  • 1 cucumber diced and peeled
  • 1 carrot peeled and grated
  • 1 roasted pepper peeled
  • 1 roasted garlic clove peeled
  • 2 tsp olive oil
  • salt & pepper
  • 1 pinch sugar
  • 1 tbsp vinegar white wine
  1. Place tomatoes in the pan and add cucumber & carrot, blend together
  2. Add salt & pepper, garlic, pepper, vinegar and olive oil then blend

Easy and nutritious, this soup is ready in minutes great for on the go lunch also Gluten free!
