5 minute Gazpacho soup
- 1 tin chopped tomatoes 500g
- 1 cucumber diced and peeled
- 1 carrot peeled and grated
- 1 roasted pepper peeled
- 1 roasted garlic clove peeled
- 2 tsp olive oil
- salt & pepper
- 1 pinch sugar
- 1 tbsp vinegar white wine
- Place tomatoes in the pan and add cucumber & carrot, blend together
- Add salt & pepper, garlic, pepper, vinegar and olive oil then blend
