Lentil and tomato stew

Healthy, easy and quick to prepare this dish is a winner! ideal for winter warmer meals and keeps well in fridge , the stew can be ideally consumed for work lunch or can be enjoyed with the company of the family.

Recipe serves four people.


  • 3 large onions sliced
  • 1 garlic clove crushed
  • 70g  dried lentils
  • 2 medium chopped tomatoes
  • 1tsp mustard seeds, crushed
  • 1/2 tsp salt
  • 1/2 tsp dried crushed chili
  • handful chopped parsley


  1. Place oil into pan  add garlic and onions stir until soft
  2. add remaining ingredients and simmer for 10 to 15 minutes
  3. remover from heat and serve with fresh parsley on top
