Healthy, easy and quick to prepare this dish is a winner! ideal for winter warmer meals and keeps well in fridge , the stew can be ideally consumed for work lunch or can be enjoyed with the company of the family.
Recipe serves four people.
Ingredients
- 3 large onions sliced
- 1 garlic clove crushed
- 70g dried lentils
- 2 medium chopped tomatoes
- 1tsp mustard seeds, crushed
- 1/2 tsp salt
- 1/2 tsp dried crushed chili
- handful chopped parsley
Method
- Place oil into pan add garlic and onions stir until soft
- add remaining ingredients and simmer for 10 to 15 minutes
- remover from heat and serve with fresh parsley on top
