An easy great tasting dinner at home, this casserole is easy to follow and always gets great feedback !

Ingredients
- 250g chicken thigh
- 400ml chicken stock
- 20g tarragon
- 50 ml white wine
- 2 whole leeks
- 200g butter
- 100 ml cream or milk
- 200g flour
- 10g dijon mustard
- seasoning (salt and pepper)
Method
- Place butter into pan and melt on gentle heat be careful not to burn pan, saute the chicken with melted butter
- add flour and stir in to form roux
- once roux is form add seasoning and mustard
- slowly add the chicken stock , make sure that you cook out butter each time you add the stock bring to the boil then add more and keep stirring all the time
- once all stock has been used add leeks , white wine and simmer for 30 minutes
- now add seasoning, tarragon and cream, stir well then serve either with potatoes and vegetables of your choice
