chicken stock

recipe followed makes 1 1/2 litres of chicken stock.


  • 2 chicken carcasses
  • 8 cups of water
  • 1 rib celery with leaves, sliced
  • 1 carrot, sliced
  • 2 bay leafs
  • 4 sprigs parsley
  • 1 garlic clove
  • 1 clove
  • 6 peppercorns
  • 1/2 tsp dried thyme
  • 2 pinches salt


  1. Combine all ingredients together in large stock pot,
  2. bring to the boil on low heat then simmer for1  1 /2 hours
  3. strain removing solids and chill in refrigerator skim and place in container, use sparingly
