Sweet yougurt and cucumber soup

Great low fat cold soup, high in protein and calcium

Recipe serves 4


  • 2 cups plain yogurt
  • 1 cup water
  • 4 dried prunes , diced
  • 1 medium cucumber, peeled and sliced
  • 1 tbsp chopped fresh chives
  • handful fresh parsley


  1. place yogurt , cucumber, prunes and water into blender
  2. blend for 4 minutes making sure everything is soft and smooth
  3. add a pinch of salt and pepper for taste, fold in chives
  4. serve in bowl with fresh parsley
