Great low fat cold soup, high in protein and calcium
Recipe serves 4
Ingredients
- 2 cups plain yogurt
- 1 cup water
- 4 dried prunes , diced
- 1 medium cucumber, peeled and sliced
- 1 tbsp chopped fresh chives
- handful fresh parsley
Method
- place yogurt , cucumber, prunes and water into blender
- blend for 4 minutes making sure everything is soft and smooth
- add a pinch of salt and pepper for taste, fold in chives
- serve in bowl with fresh parsley
