300g Sweet potato
300g Pumpkin
50g Butter
1 tbsp Dijon mustard
Pinch Seasoning = salt and pepper
100ml Cream (or milk)
Method
- Peel sweet potato and pumpkin dice into large cubes and place into hot pan of salted water, leave on high heat for 40-45 mins
- When soft remove and drain water from vegetables
- Add butter, cream, mustard and seasoning
- Mash together until lumps are removed
- Taste for seasoning and correct
