Carrot and Coriander Soup
Ingredients
- 4 Large carrots peeled & chopped
- 2 Onions peeled and diced
- pinch salt and pepper
- 1 1/2 litres stock ( chicken or vegetable)
- Handful Fresh Coriander
Method
- Boil water, then add stock (cubes or powder) to boiling water and whisk until all stock is dissolved
- Place all prepared carrots and onions into boiling stock and leave on the heat for 20 minutes until carrots are cooked fully
- Add the salt, pepper cook for a further 5 minutes
- Using a blender or food processor, blend the soup with the fresh coriander
