Carrot and Coriander Soup Recipe

Carrot and Coriander Soup
  • 4 Large carrots peeled & chopped
  • 2  Onions peeled and diced
  • pinch salt and pepper
  • 1 1/2 litres stock ( chicken or vegetable)
  • Handful Fresh Coriander
  1. Boil water, then add stock (cubes or powder)  to boiling water and whisk until all stock is dissolved
  2. Place all prepared carrots and onions into boiling stock and leave on the heat for 20 minutes until carrots are cooked fully
  3. Add the salt, pepper cook for a further 5 minutes
  4. Using a blender or food processor, blend the soup with  the fresh coriander
