The worlds easiest and best tasting  pizza?  Spinach tortilla!

It’s amazing the amount of food you can make with plain tortillas. I love using them as pizza bases as they come out perfect every time. They normally take about 5 minutes to prepare and 8 minutes to cook.

Toppings can be what ever you choose, I prefer thick using thick sauces for the topping as you get better results.  You add anything on top of your tortilla, toppings like: cheese, avo’s, peppers, tomatoes, creme fraiche. Just make sure that the toppings aren’t too wet otherwise they will roll off the side when cooking.

Preheat your oven at 190 c for 3 minutes whilst you prepare your amazing pizza. For this pizza I used spinach and white sauce.

The great thing about using tortillas  is that you don’t have to worry about rolling and shaping, also they come in packs of six which I find quite nice.

First made a white cheese sauce,making the sauce nice and thick then adding two blocks of frozen spinach. Topping the tortilla with small size spoons of creme fraiche is a delight then finishing with grated cheese and herbs.

 

Making  a white sauce its easy, 25 g butter or oil heated up then add 50g flour, cook until paste is formed. Then slowly add 100 ml veg stock and 100 ml milk. Once this is made, drop the frozen spinach into the sauce. Then add herbs and a little pinch of salt and pepper.

When completed you should have a lovely spinach sauce, you can add diced onions, peppers, olives, what ever you desire. For this recipe I added grated  parmesan and grated cheddar cheese. I then cooked for 5-8 minutes on 190 c.

Remember to keep an eye on the pizza when cooking, as they don’t take long.
