Here's a recipe for a delicious omelette with spinach, tomato, and red pepper:
1/4 cup fresh spinach, chopped
1/4 cup diced tomato
1/4 cup diced red pepper
1 tbsp. olive oil
Salt and pepper to taste
Optional: shredded cheese for topping
Crack the eggs into a bowl and whisk them together with a fork until fully beaten.
Add the chopped spinach, diced tomato, and diced red pepper to the egg mixture and mix until evenly distributed.
Heat a non-stick skillet over medium heat and add the olive oil.
