Omelette with spinach, tomato and red pepper - Fitness Health

Here's a recipe for a delicious omelette with spinach, tomato, and red pepper:

Ingredients:

3 eggs
1/4 cup fresh spinach, chopped
1/4 cup diced tomato
1/4 cup diced red pepper
1 tbsp. olive oil
Salt and pepper to taste
Optional: shredded cheese for topping


Instructions:

Crack the eggs into a bowl and whisk them together with a fork until fully beaten.


Add the chopped spinach, diced tomato, and diced red pepper to the egg mixture and mix until evenly distributed.


Heat a non-stick skillet over medium heat and add the olive oil.


Once the oil is hot, pour the egg mixture into the skillet and let it cook for a few minutes until the bottom starts to set.


Use a spatula to gently lift the edges of the omelette and let the uncooked egg mixture flow to the bottom of the skillet. Repeat until the top of the omelette is no longer runny.


Sprinkle salt and pepper to taste over the omelette.
If desired, sprinkle shredded cheese on top of the omelette and fold it in half.


Let the omelette cook for an additional minute or until the cheese is melted.


Slide the omelette onto a plate and serve hot.
