Poached egg's are the healthiest and best way to cook your egg's. So simple to cook the best poached egg. All you need is boiling vinegar water in a sauce pan.

The most common reason eggs are over cooked or broken is due to the heat of the water. You need to get the water in the pan at boiling point. This is the process when you can see bubbles on from the bottom raising up through the water from the bottom of the pan. Also make sure the vinegar is added to the water beforehand, add plenty as this keeps the egg whites together when cooking.

Ingredients
  • Salt and pepper
  • 4 large free range eggs
  • Rye Toast 
  • Red Pepper Pesto 

 

Preparation

To poach the eggs, take a large saucepan of water to the boil, mix in the vinegar, and then mix the water rapidly in a spherical motion to make a vortex.

Crack all the egg's into the centre of the pan and cook for six minutes.

Whilst the egg's are cooking, toast the rye  bread in the toaster, 

Using a perforated spoon to take the soft eggs out of the water. Do this with care as the eggs are delicate. Place on paper towel so that the water drains out, then serve up on the rye toast.  when needed. Finish with red pepper pesto and pepper and salt if needed.
