Sweet potato and pumpkin mustard mash

 

300g Sweet potato

300g Pumpkin

50g Butter

1 tbsp Dijon mustard

Pinch Seasoning = salt and pepper

100ml Cream (or milk)

 

 

Method

  1. Peel sweet potato and pumpkin dice into large cubes and place into hot pan of salted water, leave on high heat for 40-45 mins
  2. When soft remove and drain water from vegetables
  3. Add butter, cream, mustard and seasoning
  4. Mash together until lumps are removed
  5. Taste for seasoning and correct
