Ingredients
- 20g honey
- 125g butter
- 100g caster or icing sugar
- 1 teaspoon vanilla extract
- 2 eggs, beaten
- 2 ripe bananas, mashed
- 190g self raising flour
- 60ml milk semi skimmed
- handful of pumpkin seeds
- handful of blue berries
Method
- Grease cake tray then melt butter, sugar, honey and vanilla in a saucepan over a medium heat.
- Remove from heat then add the mashed bananas, mix well until paste is formed
- Add the eggs and mix well then stir in the flour and the milk, at the end add berries
- Pour into the prepared tin, sprinkle with pumpkin seeds and a little sugar
- Bake at 170 C or Gas 3 for 35 minutes
