Banana and blueberry cake



  • 20g honey 
  • 125g butter
  • 100g caster or icing sugar
  • 1 teaspoon vanilla extract
  • 2 eggs, beaten
  • 2 ripe bananas, mashed
  • 190g self raising flour
  • 60ml milk semi skimmed 
  • handful of pumpkin seeds 
  • handful of blue berries 


  • Grease cake tray then melt butter, sugar, honey and vanilla in a saucepan over a medium heat.
  • Remove from heat then add the mashed bananas, mix well until paste is formed 
  • Add the eggs and mix well then stir in the flour and the milk, at the end add berries 
  • Pour into the prepared tin, sprinkle with pumpkin seeds and a little sugar 
  •  Bake at 170 C or Gas 3 for 35 minutes
