healthy croissant recipe



  • 1 kg flour
  • 20g salt
  • 100g sugar
  • 30 g yeast
  • 2 whole eggs
  • 500 g water
  • 20g milk powder
  • 20g bread improver


  1. Place all ingredients in mixing bowl, and mix on level 1 for 5 minutes
  2. After 5 minutes turn up power on mixer to level 2 for 10 minutes
  3. Remove dough from mixer and cut into 100g , roll out into square and fold from corner to corner , then brush with vegetable oil
  4. place on to greased tray and prove in mildly warm area for 50 minutes, your looking to increase the size by double from the active yeast action. Should raise to large croissant. Make sure tray is covered either with damp towel or cling film, remember not to wrap to tight so dough can raise
  5. Once proved place into oven at 190 c for 4 minutes then turn down to 160 c for 7 minutes
  6. Take out of oven and leave rest and cool for 10 minute then serve.
