Cheese scone recipe for 24 scones

Ingredients

  • 1,500 g plain flour
  • 100 g baking powder
  • 500 g grated cheese
  • 1 tsp cayenne pepper
  • 2 tsp salt
  • 2 tsp pepper

Method

  1. In a large bowl, mix the dry ingredients together (flour, baking powder, cheese, cayenne pepper, salt, and pepper) until a light biscuit-like mixture is achieved. Be careful not to overwork the mixture.
  2. Add 1.6 litres of cream to the mixture and gently mix until everything just binds together.
  3. Transfer the dough onto a work surface, press it down evenly, and cut into squares measuring 2 inches in depth and 4 inches on each side.
  4. Place the squares onto a greased baking tray.
  5. Bake in a preheated oven at 176°C for 2 minutes to achieve a rise.
  6. Reduce the oven temperature to 155°C and bake for an additional 10 minutes.
  7. Remove from the oven and allow the biscuits to cool on the tray.
