Homemade sweet chilli sauce

recipe makes 1 litre of sauce


  • 6 lemon grass storks
  • 10  fresh chillies
  • 500g ginger
  • 12 garlic cloves
  • 250g coriander storks
  • 80 ml fish sauce
  • 200ml soy sauce
  • 70ml rice vinegar
  • 750 g granulated sugar
  • 1.5 litres Water


  1. Place water in pan and place on high heat , dissolve sugar with hot water and caramelise together.(20 min, reach bubbling )
  2. Peel garlic and ginger and chop into small pieces
  3. Slice lemon grass and chilli, combined with the ginger and garlic, place into food processor and blend until smooth paste is formed
  4. Add the paste to caramelised water and fold together
  5. Remove from heat and add rice vinegar, soy and fish sauce
  6. Place into bottle or tub in cool area.
