recipe makes 1 litre of sauce
Ingredients
- 6 lemon grass storks
- 10 fresh chillies
- 500g ginger
- 12 garlic cloves
- 250g coriander storks
- 80 ml fish sauce
- 200ml soy sauce
- 70ml rice vinegar
- 750 g granulated sugar
- 1.5 litres Water
Method
- Place water in pan and place on high heat , dissolve sugar with hot water and caramelise together.(20 min, reach bubbling )
- Peel garlic and ginger and chop into small pieces
- Slice lemon grass and chilli, combined with the ginger and garlic, place into food processor and blend until smooth paste is formed
- Add the paste to caramelised water and fold together
- Remove from heat and add rice vinegar, soy and fish sauce
- Place into bottle or tub in cool area.
