300g Breadcrumbs
160g apricots( fine chopped )
170g pine nuts (crushed)
170g cashew nuts (crushed)
10g fresh thyme
100g butter
30g dried mixed herbs
300ml vegetable stock
seasoning ( salt and pepper)
Method
- Place breadcrumbs into bowl, add fruit, nuts and thyme then mix together well
- Add butter and then cover with hot vegetable stock
- Using a spoon combined all the ingredients together until soft paste is achieved
- Line a baking tray with butter and grease proof paper then place mixture into tray
- Place into hot oven 200c cook for 20 minutes
- Remove from oven the turn the roast onto flat tray, remove baking tray and grease proof paper and cook for a further 15 minutes
- Take out of oven then serve hot
