Pine and cashew nutroast with apricots


300g Breadcrumbs

160g apricots( fine chopped )

170g pine nuts (crushed)

170g cashew nuts (crushed)

10g fresh thyme

100g butter

30g dried mixed herbs

300ml vegetable stock

seasoning ( salt and pepper)


  1. Place breadcrumbs into bowl, add fruit, nuts and thyme then mix together well
  2. Add butter and then cover with hot vegetable stock
  3. Using a spoon combined all the ingredients together until soft paste is achieved
  4. Line a baking tray with butter and grease proof paper then place mixture into tray
  5. Place into hot oven 200c cook for 20 minutes
  6. Remove from oven the turn the roast onto flat tray, remove baking tray and grease proof paper and cook for a further 15 minutes
  7. Take out of oven then serve hot
