- 2 tins chopped tomatoes,
- 3 roasted garlic cloves
- ½ fresh chilli
- 1 large onion
- 40g Mixed herbs
- 100ml stock (Vegetable or Chicken)
- 1 Star anise
- gastric (vinegar & sugar )
Method
- Fry onion, garlic and chilli together
- Combine tomatoes and star anise in a saucepan and bring to the boil
- Add stock reduce heat and simmer, stirring occasionally for 3-4 minutes
- Place vinegar and water on heat , caramelize then add to sauce
- Finish with mixed herbs and seasoning
