Easy Breakfast pancake recipe

Here's my simple recipe for breakfast pancakes

Ingredients:

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 2 tablespoons unsalted butter, melted, or vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract (optional)

Instructions:

1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
2. Wet Ingredients: In another bowl, beat the egg and then mix in the milk and melted butter. Add vanilla extract if using.
3. Combine: Pour the wet ingredients into the dry ingredients. Stir until just combined. The batter should have small to medium lumps.
4. Preheat Pan: Preheat your frying pan to medium heat and coat with a thin layer of butter or oil.
5. Cook Pancakes: For each pancake, spoon 2 tablespoons of batter onto the pan. Cook until bubbles form on the surface. Then, flip with a spatula and cook until browned on the underside, 1 to 2 minutes more.
6. Serving: Serve warm, with your favorite toppings like syrup, fruit, or yogurt.
I love to serve these with fresh berries and cream. Enjoy your breakfast pancakes!
