Easy Protein veggie breakfast fix
This truly is a very simple recipe that delivers in taste and nutrients, taking less than ten minutes to make this is an ideal quick fix packed full of healthy fresh natural ingredients which is made with: spinach, tomatoes, olives, mushrooms and courgettes. Not forgetting the ever so important extra rich in protein foods eggs and feta cheese.
A handful of all the following foods
Fresh leaf Spinach
Fresh Tomato chopped
Feta cheese crumbled
4 free range eggs
2 teaspoons red pepper pesto
Simple method of cookery prep these ingredients first, place a large frying pan on the heat. Once hot add a drizzle of oil then fry all vegetables ingredients in a pan on high heat for 4 minutes until slightly soft.
Once vegetables are ready break each egg into the pan removing the shell, once all eggs are added and stir and break each egg yolk. Make sure that you tilt the egg mix to cover the pan, once covered cook on the heat for a further 2 minutes, remove from heat then add a handful of feta cheese and place under the grill for a further 5 minutes to cook both sides evenly.
Once cooked remove from grill then place on plate and serve with a handful of fresh spinach and red pepper pesto.
