Fried Eggs on Toasted Bagel with Fresh Cherry Tomatoes and Tomato and Chilli Sauce served with shed load of fresh spinach



- 1 bagel, sliced and toasted
- 2 large eggs
- 4 cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 tablespoons tomato and chilli sauce


1. Preheat a non-stick pan over medium heat and add olive oil.

2. Crack the eggs into the pan, add salt and pepper, and fry until the egg white is set but the yolk is still runny.

3. While the egg is cooking, toast the bagel until golden brown.

4. Once the bagel is toasted, spread a generous amount of tomato and chilli sauce on one side of the bagel.

5. Add the sliced cherry tomatoes on top of the sauce.

6. When the egg is done, remove it from the pan and place it on top of the tomatoes.

7. Top the egg with a pinch of salt and pepper.

8. Serve immediately with a shed load of fresh spinach and enjoy your delicious fried egg on a toasted bagel with fresh cherry tomatoes and a spicy tomato and chilli sauce.
