Macaroni and Cheese with Spinach and Vegan Cheese Recipe 

Cook 1/4 cup of dry macaroni in 2 cups of water for about 8 minutes over high heat. Drain the macaroni and place it back in the pot.

Add in 1/4 cup of flour and stir for about one minute.

Add 1/2 cup of unsweetened non-dairy milk and 1/2 teaspoon of salt.

Stir the mixture until it starts to thicken.

Add in 1/2 cup of unsweetened vegan cheese and stir until it has melted.

Add in 2 cups of chopped spinach. Stir again until the spinach is well mixed in. Pour the macaroni and cheese into a greased 9-inch glass baking dish

. Bake at 375 degrees Fahrenheit for about 20 minutes or until the top is browned.
