This is a simple vegetarian lunch or brunch idea, cooking with tortillas is great and easy. For this recipe you will need roughly 20 minutes and the following ingredients

Frozen spinach 2 cubes 

Fresh Tortilla  2 pcs 

Cheddar cheese grated 2 handfuls 

Free range eggs 2 

Organic milk  100ml 

Butter 50g 

Pepperoni (vegan) 10 slices

Make sure that
