Ingredients

For the Braised Tofu

  • 1 block (14 oz) firm or extra-firm tofu, pressed and cut into cubes
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon sesame oil
  • 1 teaspoon sriracha or chili garlic sauce (optional, for heat)
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon vegetable oil (for frying)

For the Stir-Fry Vegetables

  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas or snow peas
  • 1 carrot, julienned
  • 3-4 baby bok choy, chopped
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger

For the Ramen Noodles

  • 2 packs of ramen noodles (discard the seasoning packets)
  • 4 cups vegetable broth or water
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon sesame oil

Garnishes (Optional)

  • Sliced green onions
  • Sesame seeds
  • Fresh cilantro

Instructions

Step 1: Prepare the Tofu

  1. Press the Tofu: Wrap the tofu in a clean kitchen towel and place a heavy object on top to press out excess water for about 15-20 minutes.
  2. Marinate the Tofu: In a bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, maple syrup, sesame oil, sriracha (if using), minced garlic, and grated ginger. Add the tofu cubes and toss to coat. Let it marinate for at least 15 minutes.
  3. Cook the Tofu: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated tofu and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.

Step 2: Prepare the Stir-Fry Vegetables

  1. Heat the Oil: In the same skillet, add 1 tablespoon of vegetable oil over medium-high heat.
  2. Stir-Fry the Vegetables: Add the garlic and ginger and sauté for about 30 seconds until fragrant. Add the red bell pepper, broccoli, snap peas, carrot, and bok choy. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  3. Add the Sauce: Stir in the soy sauce, hoisin sauce, and sesame oil. Toss to coat the vegetables evenly. Cook for another 2-3 minutes. Remove from heat and set aside.

Step 3: Prepare the Ramen Noodles

  1. Cook the Noodles: In a large pot, bring the vegetable broth or water to a boil. Add the ramen noodles and cook according to the package instructions, usually 3-4 minutes.
  2. Season the Noodles: Drain the noodles and return them to the pot. Add the soy sauce and sesame oil, and toss to combine.

Step 4: Assemble the Dish

  1. Combine Everything: In the skillet with the stir-fried vegetables, add the cooked tofu and gently toss everything together to combine.
  2. Serve: Divide the seasoned ramen noodles into bowls. Top with the braised tofu and stir-fry vegetables.
  3. Garnish: Garnish with sliced green onions, sesame seeds, and fresh cilantro if desired.
