Artichoke & red onion omelette

Artichoke & red onion omelette Vegetarian, gluten free & wheat free Recipe serves 1
  • 10g Butter
  • 1/2 Red onion finely sliced or Diced
  • 1 Artichoke heart quartered & chopped
  • 1 tsp Lemon juice
  • 3 Eggs broken and mixed with pinch salt & pepper
  • 30g Raclette or Gruyere strong cheese grated
  • Hand a handful flat leaf  Parsley Chopped
  1. Most important use a not stick pan
  2. Melt butter on large pan high heat , make sure not to burn fry artichokes & red onions together
  3. Shallow fry until soft, then add lemon juice, dissolve into vegetables takes 1 minute
  4. Add beaten eggs and stir into mix make sure cover all the pan bottom by lifting & circling 1-2 minutes
  5. Add cheese on top and grill for 3 minutes, remove from grill sprinkle with parsley and serve.
