Easy Omelette RecipeHealthy Omelette Recipe

Vegetarian, gluten free & wheat free

Recipe serves 1

  • 10ml Olive Oil
  • 1/2 Red onion finely sliced or Diced
  • 3 sundried tomatoes chopped
  • handful of olives chopped 
  • 3 Eggs broken and mixed with pinch salt & pepper
  • 30g Cheddar strong cheese grated
  • Hand a handful flat leaf  Parsley Chopped

Method

Most important use a not stick pan

  1. Add oil to large pan and place on high heat, shallow fry red onions, olives and tomatoes together, cook for 2 minutes
  2. Then add beaten eggs and stir into mix make sure cover all the pan bottom by lifting & circling 1-2 minutes
  3. Add cheese on top and grill for 3 minutes, remove from grill sprinkle with parsley and serve.
