Healthy Omelette Recipe
Vegetarian, gluten free & wheat free
Recipe serves 1
- 10ml Olive Oil
- 1/2 Red onion finely sliced or Diced
- 3 sundried tomatoes chopped
- handful of olives chopped
- 3 Eggs broken and mixed with pinch salt & pepper
- 30g Cheddar strong cheese grated
- Hand a handful flat leaf Parsley Chopped
Method
Most important use a not stick pan
- Add oil to large pan and place on high heat, shallow fry red onions, olives and tomatoes together, cook for 2 minutes
- Then add beaten eggs and stir into mix make sure cover all the pan bottom by lifting & circling 1-2 minutes
- Add cheese on top and grill for 3 minutes, remove from grill sprinkle with parsley and serve.
