Halloumi and Roasted Red Pepper Salad - Fitness Health



  • 1 pack Halloumi 
  • 2 Red Capsicums  
  • Olive oil  
  • Rocket leaves - handful
  • Fresh Parsley - chopped
  • Cucumber - chopped 
  • 1 Carrot - Grated 
  • Fresh cherry tomatoes
  • Fresh salad leaf mix 


      1. Turn oven on pre heat 180 c. Prepare vegetables first red peppers remove all 4 sides and bottom then place on tray then drizzle with oil and place  grill on high heat for 8 minutes. (Dust with a pinch of salt and pepper on both before popping under the grill) .
      2. Prepare Halloumi, first slice the halloumi length ways to 1cm then sliced drizzle with a little oil place under grill 4 minutes remove turn over repeat on other side. 
      3. Whilst the peppers and halloumi are prepare all the salad ingredients and place on the plate  
      4. Once Halloumi and peppers are ready take the and slice  Halloumi length ways, aiming to get 6 slices remove skin from capsicums and slice. Combine all together on plate. Finish with herbs and dressing.
