Chicken, chorizo, lentil and bean red wine casserole

 

This is my recipe for red lentil, bean chorizo and chicken red wine casserole. This recipe serves normally 2 to 4 people.

The ingredients for this recipe are easy to find in any local supermarket. In the cooking and preparation time for this – would take 45 minutes ingredients are as follows:


1 red onion finely diced
2 garlic cloves pureed
Half a cup of red lentils
1 tin of baked beans
2 cups of chicken stock
1 cup of red wine
1 tablespoon of tomato Purée
1 chorizo sausage 300 g
400 g of boned fresh chicken thigh diced
2 handfuls of fresh rocket
1 fresh lemon squeezed

Method 


First place a saucepan medium-sized on the heat, allow the plan to get to medium heat then add olive oil, once hot add the garlic, red onion, red lentils ,chorizo and fresh chicken.

Cook ingredients together for roughly 5 minutes, you're aiming to cook the chicken so that all the outside of the chicken is a nice golden colour. Once you've got a colour on the meat you now need to add the chicken stock and red wine to the pan Bring the pan to the boil and then lightly simmer for 10 minutes, so that all the meat inside the pan is cooked and lentils I have absorbed the flavours.

After 10 minutes we no need to add the big beans to the saucepan with the added extras of paprika, salt, pepper and sugar. Once the remaining ingredients of all been added to the saucepan please cook for another 5 to 6 minutes on medium heat.

Remove from heat once the cooking has finished. Then place on a plate and served with fresh rocket salad with a drizzle of freshly squeezed lemon juice over the top.
