Carrot & cumin soup
This recipe is for ideal for large number of servings. Follow the recipe below to make 10 servings of soup.
You can easily freeze half this soup, or just halve the recipe for 4-5 servings.
- 1 kg carrots peeled & chopped
- 3 large onions peeled and diced
- 1 small cut of fresh ginger
- 20 g cumin ground
- 10g ground coriander
- 5g cumin seeds
- 1 tin coconut milk 300g
- pinch salt and pepper
- 2 litre stock ( chicken or vegetable)
Make the stock, add the onions carrots cook for 20 minutes on low heat until soft.
Then added all the remaining ingredients simmer for a further 5 minutes the blend.
