lemon & thyme sorbet


  • 3 lemons juiced
  • 1 lemon zest (grated)
  • 6ooml Water
  • 3 fresh thyme springs
  • 250g Caster sugar


  1. place water in sauce pan, dissolve  sugar in water and add thyme
  2. place on hob, medium heat
  3. add lemon & zest then bring to boil
  4. remove from heat and allow to cool,
  5. when cool strain into container and place in freezer
  6. remove every 4 minutes and whisk to break ice, do this until the mixture forms smooth ice texture.
