200g Beef steak thinly sliced and trimmed
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
1 cup of rice noodles - cooked and cooled down
10 lettuce - leaves washed
1/2 red onion - thinly sliced
1 handful fresh mint - chopped
1 handful coriander - chopped
1/2 cucumber- sliced
2 tablespoons chopped roasted peanuts
1 fresh lime juiced
2 tablespoons fish sauce
2 teaspoons brown sugar
1. Heat a frying pan over medium-high heat. Season sliced steak with salt and pepper. Cook steak evenly in pan for 3 minutes each side, then remove from pan and leave to rest for 7 minutes. Once steak has rested cut into thin slices.
2. Using a large mixing bowl, mix the lime juice, fish sauce, sugar, stirring with a whisk. Keep stirring until sugar is dissolved. Add steak, onions and the rice noodles to the bowl with coriander
3.Place the beef and noodle mix into the centre of each lettuce leaf; top each with a few mint leaves and a slice of cucumber, then sprinkle evenly with peanuts then roll the leaf up and serve with sweet chilli sauce.
