Protein Breakfast Burrito - Fitness Health

Ingredients 

1 tin butter beans (drained and washed) 

1 tin baked beans in tomato sauce 

2 teaspoons paprika

1 onion

4 slices of bacon 

2 wholemeal tortillas

3 eggs (scrambled) 

1/2 cup of natural yoghurt 

1 table spoon butter

 

Method 

 Place pan on medium heat, add oil into pan wait for a minute then add the sliced onion and cook for a few minutes then add butter beans with the paprika and baked beans cook for 10 minutes on low heat.

Whilst the beans are cooking prepare the eggs, Whisk the eggs together adding a little salt and pepper to the egg mix, then add butter and yoghurt to the mix and whisk a little further. Place them in a plastic microwaveable bowl then pop in the microwave and cook for 1 minute. 

Place a saucepan on medium heat, add a little oil. Once the pan is hot add the bacon slices to the pan. 

Remove the eggs from the microwave and whisk again. Then place back in the microwave and cook for a further minute .

Go back to cooking the bacon, if needed turn the heat up on the pan to cook faster. 

Remove the eggs for the microwave and take the beans off the heat. Place the tortillas on the plate and put the beans in a line in the centre of the wrap with a scrambled egg on top. Make sure you drain the excess water off the cooked scrambled eggs. Place the crispy bacon on top then close the wrap. 

Do this by first folding the bottom of the wrap upwards, then fold the left side and roll towards the right making sure the wrap is nice and tight.
