Simple Roast Vegetable Watercress Salad

I love roasting vegetables,  it has to be the best way to cook them to get the maximum taste. When roasting vegetables I place them all on a baking tray then drizzle with olive oil and season well with salt and pepper. All you need to do is chop them into 2 cm squares then cover with oil , seasoning and a little extra herb – oregano, thyme or rosemary .Place them in the oven and cook for 10-15 minutes on 200 c.

Once the vegetables are in the oven clean down your work place then place watercress in a bowl and wash throughly. Once washed and drained season with olive oil, salt and pepper and place into a large bowl. Once the vegetables are roasted remove from the oven and add to salad with a little dressing.
