Avocado lemon grass soup recipe.

 

Avocado recipe for soup, lemon grass has an amazing taste, when you combined with avocado the favours are fresh and exciting. This is a perfect start for any dinner party. Cooking and preparing time 25 minutes 1 tbsp Olive oil 1 Onion peeled and diced 2 Cloves garlic 1 1/2 litre Chicken or Vegetable stock 3 Avocados ripe 1 tbsp tarragon 1 lemon grass stork( roughly chopped ) 1 handful chopped parsley Preparation time 10 minutes Method
  1. Heat pan, add olive oil, wait until hot then fry garlic, lemon grass and onion.Cook onions and mix until soft  3 minutes
  2. Then Add stock to pan carefully do  not to add to much to fast. 2 minutes
  3. Once stock is complete add remaining ingredients avocado, tarragon & parsley  and simmer for 10 minutes
  4. Season with salt & pepper, blend then serve with good wholemeal bread
