Beef Steak with Roasted Vegetable Tortilla
  • 400 grams Sirloin beef steak
  • 2 Garlic cloves 
  • 1 leek sliced 
  • 2 Large onions peeled and diced
  • 1 Carrot peeled and diced
  • 1 Capsicum diced
  • 2 Fresh Chillies finely diced
  • ½ kg Mushrooms sliced
  • Seasoning (salt and pepper)
  • 2 tbsp tomato Puree
  • 1 tin tomatoes
  • 1 tablespoons oregano 
  • 2 Tortillas 

Method

  1. First prepare the vegetables for roasting, turn the oven on gas mark 6. Once vegetables are chopped place in dish with oil. Then season with salt and pepper. cook for 20 minutes click for more info on roasting vegetables 
  2. Place pan on medium heat, add oil in pan and heat for one minute then add garlic, chilli and onions and sauté for a minute 
  3. Place the beef steak in the pan and cook fry for 4 minutes then turn and cook on the other side for 4 minutes.  Remove and place to one side. Add tomato puree, capsicum, carrot to the pan and cook for a further adding chopped tomatoes cook for 5 minutes high heat , then season with salt and pepper. 
  4. Slice steak once rested then add sauce on the steak and finish with the roasted vegetables
  5. Serve fresh with sour cream and salsa ( cheese is optional)
